Such a simple yet tasty quick and easy tray bake meal. Sure to impress everyone!

Ingredients
  • 4 chicken drum sticks and 4 thigh, skin removed
  • 1 heaped tablespoon dried thyme
  • 1 small lemon, finely sliced
  • ½ cup white wine
  • ½ cup chicken stock
  • ½ packet of olives
Method
  1. Preheat your oven to 180 degrees Celcius.
  2. Place some foil on the base of a roasting dish/pan (this saves on washing up later but isn’t essential to the recipe).
  3. Place chicken pieces in roasting tray and sprinkle over the thyme, olives and lemon slices.
  4. Finally pour over the white wine and stock.
  5. Bake in the oven for about 40 minutes. See note below!
  6. Serve with a side salad or roast veg and a healthy high fibre carb for a complete meal.
