Recipe type: Lunch
Cuisine: Vegan or Vegetarian
Serves: 20
Ingredients
  • 1 cup dried chickpeas, soaked overnight (min 24 hours)
  • ½ white onion
  • ½ tin chickpeas
  • ½ cup parsley, packed
  • 2 cloves garlic
  • 1 teaspoon cumin
  • ½ teaspoon salt
  • ½ tsp baking powder
  • 2 teaspoons lemon juice
  • 1 tablespoon olive oil
  • 4 tablespoons flour (regular or gluten free (ideally chickpea))
Method
  1. Using a food processor - blend the tinned chickpeas and onion together till almost smooth.
  2. Then add the soaked chickpeas, parlsey, garlic, cumin and salt together till a crumbly texture - not a paste (else you're making hummus!).
  3. Then add the baking powder, lemon juice, olive oil and flour and pulse to blend.
  4. The mixture should stick together nicely and not be too sticky that it sticks too much to your hands when you try fashion a falafel.
  5. Bake them in an oven at 180 degrees C on a baking tray sprayed with non-stick spray for 15 minutes on one side then turn over and bake for a further 5 minutes.
  6. Serve inside a pita pocket or a wrap filled with hummus and veggies
Notes
Make this Gluten free by using gluten free flour - I tried with chickpea flour and it worked perfectly. Not sure about others but am certain they will work too.
