BAKED VEGAN FALAFELS

- 1 cup dried chickpeas, soaked overnight (min 24 hours)
- ½ white onion
- ½ tin chickpeas
- ½ cup parsley, packed
- 2 cloves garlic
- 1 teaspoon cumin
- ½ teaspoon salt
- ½ tsp baking powder
- 2 teaspoons lemon juice
- 1 tablespoon olive oil
- 4 tablespoons flour (regular or gluten free (ideally chickpea))
- Using a food processor - blend the tinned chickpeas and onion together till almost smooth.
- Then add the soaked chickpeas, parlsey, garlic, cumin and salt together till a crumbly texture - not a paste (else you're making hummus!).
- Then add the baking powder, lemon juice, olive oil and flour and pulse to blend.
- The mixture should stick together nicely and not be too sticky that it sticks too much to your hands when you try fashion a falafel.
- Bake them in an oven at 180 degrees C on a baking tray sprayed with non-stick spray for 15 minutes on one side then turn over and bake for a further 5 minutes.
- Serve inside a pita pocket or a wrap filled with hummus and veggies
Make this Gluten free by using gluten free flour - I tried with chickpea flour and it worked perfectly. Not sure about others but am certain they will work too.
