A tasty quick and easy lunch for lunchboxes or chilled weekend. Pair with a side salad and you've got a delicious meal.

Ingredients
1 small onion, peeled and grated (or super finely chopped)
1 tin tuna, in water, drained
1 egg, beaten
30g low fat cheese, grated (1 matchbox)
30ml cornflour (2TBSP)
200ml fat-free milk
Freshly ground black pepper, to taste
10ml dried mixed herbs
Method
Preheat the oven to 180 degrees C and spray a small 20cm tart dish with non-stick cooking spray.
Put the grated onion into a medium size glass, microwave-proof bowl, cover with a lid and microwave on high for 2 minutes. Remove from microwave and set aside.
Mix all the ingredients into the onion bowl and mix well with a metal spoon until combined.
Spoon the ingredients into the tart tin and bake for 40-45 minutes or until set and lightly browned on the top.
Cut into 4 servings and serve each person with 2 cups of salad or 1 cup of cooked vegetables.
