EASY EGG MUFFINS

Eggs are another super versatile ingredient we always have in our home.  They make delicious filling breakfasts, snacks and one of our favourites – egg muffins.  I have been asked to share my recipe and so here it is.  Feel free to experiment with the fillings and a helpful hint – this recipe is great for using up leftovers and stores beautifully in the fridge!  These are great for people who travel a lot as they are easy to store and eat on the go, for kiddies lunch boxes and adult lunch boxes too.  They just need to be paired with/without a starch (up to you) and a large salad for a complete meal.

Super quick, tasty and healthy egg muffins for lunches on the go

Ingredients
  • 6 large Eggs
  • About 30ml milk
  • Salt and Pepper
  • Mixed Herbs (or chilli flakes - depends what works with your fillings)
  • Filling Ideas: pepperdews, leftover roast veg, spinach, feta, smoked chicken, tuna, leftover cooked meat
Method
  1. Preheat your oven to 180 degrees C.
  2. Spray a muffin tray with non stick spray.
  3. Crack eggs and put into a mixing bowl and add milk. Whisk lightly.
  4. Place fillings into muffin tray - about ¾ full.
  5. Pour in egg mixture into each muffin cup until nearly full.
  6. Bake on the middle tray of your oven for 20 minutes until they have risen and are golden.
  7. While this recipe doesn't contain exact amounts of fillings - it really is just a great recipe for using up leftovers and being creative with what you have. For mine in the picture I used about 1 large smoked chicken breast, 8 pepperdews (chopped) and one round of black pepper feta.
  8. I generally serve 2-3 with a slice of low GI or rye bread and an extra side salad.
