I hear it so often – healthy eating takes a lot of time. My main aim is to show everyone that this is not always the case. Stocking up on fresh foods and keeping a well stocked pantry can allow you to create delicious food in a fast and fuss free way.
Now, this chicken tray bake is a real winner – I have often served it at family gatherings and when I need to make a meal for a new mom and also when we need to jazz up a chicken pack. It is quick and easy and SO tasty. Give it a try and I can guarantee it will be a keeper. Originally inspired from a recipe in my Pick ‘n Pay Fresh Living Magazine – I adapted it a little and love this version and hope you will too.
EASY LEMON, OLIVE & CHICKEN TRAY BAKE

Such a simple yet tasty quick and easy tray bake meal. Sure to impress everyone!

Serves: 4-6
Ingredients
- 4 chicken drum sticks and 4 thigh, skin removed
- 1 heaped tablespoon dried thyme
- 1 small lemon, finely sliced
- ½ cup white wine
- ½ cup chicken stock
- ½ packet of olives
Method
- Preheat your oven to 180 degrees Celcius.
- Place some foil on the base of a roasting dish/pan (this saves on washing up later but isn’t essential to the recipe).
- Place chicken pieces in roasting tray and sprinkle over the thyme, olives and lemon slices.
- Finally pour over the white wine and stock.
- Bake in the oven for about 40 minutes. See note below!
- Serve with a side salad or roast veg and a healthy high fibre carb for a complete meal.
