Beetroot & Carrot Salad

This recipe is a firm favourite in my family – it is easy to prepare, delicious and high in antioxidants and vitamins and minerals. I hope you enjoy it as much as we do! It is also a great mayo free alternative, especially for those who like extra creamy mayo.

Beetroot & Carrot Salad
A wonderful braai or barbeque accompaniment or side dish using jarred beetroot you can keep in your cupboard for making this delicious salad.
Recipe type: Side Dish, Braai
  • 3 medium carrots, grated (do not peel)
  • 1 small bottle of grated beetroot, drained
  • 1 small onion, peeled and sliced finely
  • 2 tsp cumin seeds
  • 3 tsp olive oil
  • 1 TBSP red wine vinegar
  • 1 small bunch of flat leaf parsley OR rocket
  1. Place the grated carrots and drained beetroot in a bowl, add the onion.
  2. Heat the cumin seeds in small pan until they are hot and smell pungent. Remove from the heat and scatter over the vegetables.
  3. Add the olive oil, vinegar and parsley, then toss well.
  4. Leave to marinate for at least 15 minutes before serving.
