I love wraps – they make create lunchbox options and the wraps freeze beautifully for when you need them. I always try to keep lunches fun and fresh – and sandwich free! So wraps are a great go-to option and can have SO many fillings so it can be a very creative experience. This is just one of those great combinations I like to use. Feel free to use smoked chicken instead of turkey.
TURKEY & AVOCADO WRAP
Author: Julie Perks Registered Dietitian
Recipe type: Lunch
Serves: 1 serving
Ingredients
- 1 wholewheat tortilla
- 2-3 lettuce leaves (add some rocket if you have)
- 4 cucumber ribbons (made by “peeling” a cucumber)
- 2 slices of shaved, cooked turkey, diced
- ¼ avocado, thinly sliced
- 3 TBSP smooth fat free cottage cheese with 1tsp mustard, sweet chilli or basil pesto
Method
- Toast your wrap on a griddle pan if you have – or leave plain, whatever you prefer.
- Smear the cottage cheese mixture over the wrap.
- Place the lettuce (and rocket) down the middle and top with turkey, cucumber ribbons and avocado.
- Cut into halves and store in the fridge for lunch.
Notes
I like to use leftovers in my wraps – hummus (instead of cottage cheese) with leftover chicken or ostrich mince and some leftover roast veg with rocket. There are so many options. Just try using a small wholewheat tortilla for ladies and a regular wrap can be used for men – or 2 small tortillas.
