I have been really busy lately and making a healthy and quick lunch has been a challenge.  So I tried this delicious tuna & onion quiche which uses ingredients I normally have in my cupboard/fridge – onions, tuna, eggs, herbs and cornflour and voila – lunch is sorted.  I just paired it with a side salad (things I ALWAYS keep in my fridge) and we’re all sorted! Quick Tuna & Onion Quiche

A tasty quick and easy lunch for lunchboxes or chilled weekend. Pair with a side salad and you've got a delicious meal.

Ingredients
  • 1 small onion, peeled and grated (or super finely chopped)
  • 1 tin tuna, in water, drained
  • 1 egg, beaten
  • 30g low fat cheese, grated (1 matchbox)
  • 30ml cornflour (2TBSP)
  • 200ml fat-free milk
  • Freshly ground black pepper, to taste
  • 10ml dried mixed herbs
Method
  1. Preheat the oven to 180 degrees C and spray a small 20cm tart dish with non-stick cooking spray.
  2. Put the grated onion into a medium size glass, microwave-proof bowl, cover with a lid and microwave on high for 2 minutes. Remove from microwave and set aside.
  3. Mix all the ingredients into the onion bowl and mix well with a metal spoon until combined.
  4. Spoon the ingredients into the tart tin and bake for 40-45 minutes or until set and lightly browned on the top.
  5. Cut into 4 servings and serve each person with 2 cups of salad or 1 cup of cooked vegetables.
